Crush the starter flakes into smaller pieces, add warm water, and allow them to rehydrate before mixing the flour.
Gluten-free starters often take several days to become active. Don’t worry if you don’t see much activity during the first few days—consistent daily feedings will help your starter wake up and strengthen over time.
✓ Discard about half the starter.
✓ Add 2 tablespoons brown rice flour.
✓ Add 2 tablespoons water.
✓ Stir well.
✓ Cover loosely.
✓ Repeat every 24 hours.
After several days you should begin seeing:
• Bubbles throughout
• Small rise after feeding
• Pleasant tangy aroma
The exact timing varies from kitchen to kitchen.
Your starter is ready to bake once it consistently doubles in size within approximately 4–6 hours after feeding.
Consistency is more important than speed.
Do not worry if your starter takes slightly longer while it matures.
